Help With Candy Melts Please

I have another candy melt question... I'm doing my bday cake icon_smile.gif tonight. I wanted to do mosiac tiles by melting candy melts & then pouring it out on wax paper to dry then breaking into mosiac tiles. Well I put some paramount crystals in each color... just a little. Will paramount crystals being added cause the candy melts to NOT harden back?? It's taking forever for them to harden so I'm worried it's not going to. Maybe it's the high humidity? Anyone know? It shouldn't hurt them much. stick the sheet into the fridge or freezer to speed up the hardening. You may want to score the tiles before they set completely.

Oh my goodness! I'm such a dork!! I haven't done candy melts in a long time... I always put them in the fridge to harden! Thanks for reminding me of that JoAnn!! I think I'm going to do different size & jagged tiles. Not sure yet. But thanks for tipping me on scoring them now! Going to do that now. Thanks so much!

I thought paramount crystals were made to keep the chocolate softer so it was more "biteable". Maybe it is part of the reason you're having trouble with the hardening.

That's what I thought too. I wasn't thinking when I added a little to each color. I've popped them in the freezer so hopefully they'll get hard. If not I have tons of candy melts I will have to start all over. icon_sad.gif

I haven't worked with the crystals, but unless you added quite a bit to them I don't see why it wouldn't firm up again.

I played with my petite four molds this week and added crisco to it, since I don't have the crystals yet. They hardened fine in the freezer.

With the heat right now, it will probably take a long time for them to harden just sitting on the counter, but it will happen eventaully. icon_smile.gif Of course with the heat too, they will probably be a bit soft after they come out of the freezer and get to room temp, unless you have your tempature turned down.

Thanks TXS. I remember now about Kathy Scott putting the crystals in her candy melts!! They are good now after being in the freezer. icon_smile.gif

Hey, TC!

The paramount crystals are used to make the melts or chocolate flow better when melted, but to HARDER and snap better when set.

Crisco can be added to the melts (or real chocolate) to make it flow better when melted, but to stay SOFTER when set.

Thanks Rae! I thought it was to make them flow better or stir better. This humidity is so bad I don't think it would have ever hardened on the counter top. I put them in the freezer for about 10 min checked, still not hardened. Checked after 30 min & they were fine. But like Texas said... with the heat... they started to soften before I was finished using them. I think I would rather be freezing cold then hot like it is now! thumbs_up.gif
