Real roses typically have a very dark green leaf to them. How would I come close to creating that color using only Wilton colors?

Forest green works fairly well. Leaf green is definitely too pale.

I have found that forest green works better. Sometimes I mix leaf green and forest green together. I have also mixed yellow and blue together, to achieve my own shade of green.

I have used leaf green with moss green to get a deep green with Wilton colors

Add the smallest bit of black to the green and it will darken.
