Summer Cake Question

I have a customer that is having a corporate party on the beach. We live in Florida and right now the heat index is at 100-105 degrees. What cake can possibly be out in that heat for several hours and not get icky?

cake without icing, or something that can be kept in a cooler until serving time.

I've had really good luck with all Crisco icing in the summer heat. Use Crisco, 10x sugar, vanilla, butter flavor, and water. It holds up very well.

Ewwwww... what ANYTHING can be out in that heat for several hours without getting icky??

Considering the environment, can you make cupcakes or cookies or brownies or cake balls and keep them in a cooler? It's rather unrealistic to expect something as delicate as a cake to hold up under those conditions. If you can fit the cake in a cooler, more power to ya! icon_smile.gif
