When i pour the batter in the pans i hit the bottom of the pans to get the air bubbles out of the cake batter so it wont rise up and burst and all that..then i put my bake even strips around the pan..anybody else hit the bottom of the pan?

I grew up watching my Mom practically abuse her cake pans!
Shaking them back and forth and then rapping them several times on the counter top.

So, what does every good daughter do?
I find I'm doing exactly the same! A bit of overkill i'm sure, but I don't have air pockets in my cakes.

I don't use baking strips, but I sure went through several batches calebrating the temp of my oven.

Bang those pans against the countertop ... about 5-6 times.... really loud! Hubby says he HATES that part of it!

I like watching the bubbles burst with each bang!! But then I'm easily entertained! icon_redface.gif

yep, I tap the pans, supposed to atleast bring the airbubbles up to the top so if or when you torte your cutting off bubbles and they're not deep in the cake. Learned that in class the other day, otherwise I would still think my mom was losing her noogies for beating up the cakes. She practically dropped them on the floor. WHAM!! icon_smile.gif Oh and I do kind of shake them side to side, supposedly to help them climb the walls of the pan better? Or is that more crazy talk from my mothericon_smile.gif

I do the same thing - bang the pans on the countertop to get rid of bubbles in the batter.

Yep! 5 or 6 times! My daughter HATES when I do that! So, when she's home, I place a kitchen towel under them to "keep the noise down!"

Yep, I do. I use a folded towel or pot holder to help keep the noise down. I mix all of my cakes by hand with a whisk so I don't get as many air bubbles.

It's so nice not to be the only one! We're down to one child at home now, he's 10 yrs old, but the others keep coming and going. I really thought my daughter moved out but I still see her at meal times. Go figure! It was REALLY interesting when the 1st three were teenagers. Let's just say, the police new where we lived! (They really weren't that bad...we just live in a small city with a large police force that didn't have enought to do at times!!!)

I've been to Salina a couple of times traveling through. So, now that your kids are grown the police really don't have much to do icon_cool.gif

My husbands daughter goes off to college this year and she's at her mom's right now, so we're down to four. And yes, we were absolutely insane for having two more children so close in age after pretty much raising the first bunch (we're both on our 2nd marriages)...but I wouldn't trade it for the world (ok, ok, it was a good day today, ask me tomorrow and I'll probably try to sell them to you) icon_lol.gif When my 16 year old was 10, 11, 12, if one of our neighbors walked up to our house I already had a hold of him ready to ring his neck for whatever he'd done this time. Now he's just an overgrown smarta**. Too bad ya can't have 'em arrested for that...

Hi, my name is Anna, and I am a pan banger!

Fortunately, there is no 12 step program for this type of abuse, nor for my cake addiction. I can find other addicts on CC 24 hours a day to help me get my fix for tips and tricks and new tools, and to feed my need for (as my husband calls it ) Cake Porn. thumbs_up.gif

However, I will not join Pan Bangers Anonymous. It's too much fun icon_twisted.gif

Don't feel too bad! It's 3:20 am here and I'm also looking at cake porn. It's just one of those late night habits that are hard to break. Well, OK, it's hard to break the habit during the day too. I also refuse to join the 12 step program...I don't have a problem!!!

That one is pretty interesting and the locked thread that's about some poor girl who posted someone else's cake on here...WOW! I've never seen posts like that on here before tonight.
