It isn't hard to make, but it does help if you know how it is supposed to feel. The trick to making it yourself, is to hold back on the powdered sugar. If you add too much, it will be dry and difficult to use.
There are several recipes, most are quite similar. It will need to rest at lease overnight. making it yourself also allows you to add color with the liquid-saves some extra work.
I've just started using fondant and haven't used gumpaste at all.... is it any harder to use than fondant ? If it gets rock hard, couldn't I make it WAY ahead and have time to play with it, then just save it if it turns out really well ? Can you tell I'm REALLY nervous about this project ? !! ![]()

If you want to use fondant to make the top you'll want to mix it 50/50% with gum paste (which is like working with clay, but sets up like rock) so it will dry and hold its shape. Do not be afraid of gum paste, it's very easy to work with and the pieces will last (if in the dark) forever. (The only problem with gumpaste is it has to be keep in an airtight container or lots of plastic wrap, etc. so it doesn't dry out.) Have fun.
What is pastilliage ? I am not familiar with that.......
Pastillage dries faster than gumpaste and is very sturdy. It is typically used for making structures and figures but it can also be rolled thin to make flowers.
The recipe I use consists of powdered sugar, gelatin, lemon juice, glucose and water. It is very easy to make.
PASTILLAJE, is like gum paste, but if you have to make big pieces, it gets very hard. you can make cribs, boxes, houses, etc.
recipe English pastillaje
3 tbs water
1 tbs gelatin Knox
1 tsp glucose
2 tbs lemon juice
1 pound confectioners sugar
Mix gelatin with water, add glucose, melt, add sugar and lemon juice.
To roll use only cornstarch not shortening. to dry, takes few days, and you have to turn the pieces every 24 hours, using a piece of cardboard dusted with cornstarch.
