I freeze roses all the time. Cover well because they will take in all sorts of smells if you don't. AND you will have to quickly put them on when you are ready as they thaw really fast. You may have to take out a few at a time.

I usually freeze my BC roses, even if I will be using them the same day. It makes it sooo much easier to handle them to put them on the cake. The only time I don't is if there isn't enough time.
To freeze them, I put them in a shallow container (lidded, with a flat bottom), in a single layer.
What would be the best way to keep them covered without gettin any odors? What kind of container could I buy to keep them in (I have to make at least 100, it's for a 6,10,and 14in wedding cake used for the borders) can they be stacked on top of each other when 1 layer is frozen?

I haven't tried stacking them (even once frozen) because I was worried about crushing or breaking the petals. I use a shallow rectangular freezer container made by Rubbermaid. It's air-tight, so odors aren't a big worry. You'd probably need several containers for that many roses, but if the containers are shallow and stackable, it shouldn't take up too much room.
I purchase mine premade from the grocery store because I don't know how to make them yet, but anyway, when I get them they are in plastic containers like they put thier small cakes in, or cupcakes or the like... and it fits 6 small roses per container with about an inch between each way ![]()

What are they going to be for? I hope you post a picture. I still haven't tried to make petit fours.
