We have a request for sliced strawberries in/on the filling of a wedding cake. How long will these stay good unrefrigerated? Do they require any special treatment? I know they can be added to a partially cooked berry filling, but this is for just fresh, sliced strawberries. Excuse the ignorance here--I know it's done all the time; it's just new for me.

At the last minute, and kept refrigerated, you can minimize the weeping of the berries for a filling.

"last minute" would be the afternoon/evening before the wedding. Refrigeration is possible but difficult because of space in the frig!

I wouldn't chance it those strawberrys are going to strt to juice when sliced and come in contact with sugar. it will be one weapy mess

maybe suggest they serve the cake with sliced strawberries on the side

I did a cake like that, all I did was a layer of BC and a dam of BC and then placed the sliced strawberries on top of the BC. The cake did fine, I put the filling that morning and did decorations that morning/afternoon, cake was served that night. I was a little juicy. I MUST add, even though it wasn't kept refrigerated it was in a room with good A/C and it was NOT in the summer time. (I was visiting family overseas and our summer is not the same months as the US) I have no idea how it would do in the heat of June, July, August.

Ive done the same thing as nefgaby and its been fine. ive done this twice once with buttercream icing on the outside and another time with whipped cream icing on the outside. The second time the strawberries were mixed in with the whipped cream icing for the filling but still with a bc dam
