Two! But a word of advice, from my own experience, you need to use a heating core of some sort in the middle of the cake (most of us use upside down flower nails) with a cake that large. I also (this is my personal quirk) like to turn my cakes half way during baking toensure even rising in my oven.

You are going to have Soooooooo much fun!

that cake isn't that big. isn't it just a bit bigger than a 9x13. i've done tons of half sheets and i never used a heating core.

How do you use the flower nail. I'm a little confused. Do you stick the point into your cake or how does that work?

Thanks,
Kim

I don't use a heating core or Bake Even strips or an upside down flower nail either and don't have problems. But some people like to use them and feel that it makes the centre cook at a faster pace and that you get a more level cake.
People use a greased and floured upside down flower nail that you make roses on, or even a few, in the cake centre to attact the heat to the centre.
I find that you need two cake mixes and a bit more, like a cup or so, to fill this size pan.

The flower nail goes flat top down into the cake, it conducts the heat so that a cake will bake more evenly. The 11 x 15 may not take all of the two mixes, I usually make either a small pan or some cupcakes with the extra. Janice

How do you take the nail out. I am sorry to sound like such an idiot but I am pretty much clueless.

Oops, I forgot to add, be sure to coat the flower nail with whatever you use on the pan to keep the cake from sticking! Janice

When you flip the cake out to cool, the nail will be on top. You can pull it out then. HTH!

I Just bake all my cakes at 325 deg. and no heating core, I've never had a problem, even the 12 * 18.
