How many of you don't count the top tier of a wedding cake into the servings? I was just curious about this. thanks

I don't charge for the top tier. But I do try to make it a 6". (Porportions don't always work out that way)

Usually it's less than 10 servings anyway, so it's not impacting the serving amt that much.

You can always ask the bride if she is planning on saving the top or if she would like to serve it, though, I haven't run across anyone yet who doesn't want to save it--in that they are pretty traditional.

I know a lot of decorators offer the option of serving the top and then giving for free a fresh cake decorated like the top tier upon the anniversary--couple must give 2 wks notice, and the top tier is counted and pd for.

Sometimes the bride does not want to save the top. She may want a fresh anniversary cake, or just save a piece. In that case, you would include those servings. Otherwise, the top tier is NOT counted in the number of servings.

I don't ever count on it for the
servings!! though... I am doing a wedding next week ,and the
bride doesn't want the top saved ,so this time I will be counting it for the serving.

I've never included the top tier in the number of servings. There have been a couple of times where the bride told me she wouldn't save it. I got an email a couple of days later saying that once she got to the reception she changed her mind and was really glad I left her a box to take it home.

I have never counted the top tier in the amount of servings and never have had a bride use it to serve guests. I provide them with a cake box and tell them to put a plastic bag over and freeze for their first year.

Pardon my ignorance as I have never sold a wedding cake but I do not understand why you wouldn't charge for the top tier. You baked it right? you decorated it right? you used your supplies right? Sorry I'm missing something here. Please advise.

It's not that you don't charge for it. You just don't include it in the guest servings.

But if you are charging by the slice (guest servings) and don't include the top tier, then you are not charging for the top tier right? Or is that padded into the bill elsewhere? Please advise.
