Peanut Butter Filling??

Okay, so my gondola cake keeps getting better. The client wants some kind of peanut butter filling icon_confused.gif My question is - would anyone have one? Also, I have reservations about making things with peanuts because of the seriousness of peanut allergy reactions. I keep thinking about the liability involved. Does anyone have any helpful input on this?

there is a recipe in the cakemix doctor book for a peanutbutter icing, but i think it could work as a filling as well. i made that recipe twice and it is one of my favorites. here is the recipe...

1 c. peanut butter
1 stick butter
2 c. powdered sugar
2 tsp. vanilla extract
3 to 4 Tbs. milk

I can vouch for the cake mix doctor recipe, it is too yummy! I used it as a filling and not as a frosting and it was delicious!

As far as the nut allergies go, I usually make a sign that says what nuts were involved with the making of this cake to be placed on the table with the cake, sometimes people use it, other times they don't. Also, if that is what the clients request, you can't say no, I worry about allergies, it is their duty to tell their guests.
