How Long Will An Iced Cake Stay Fresh???

I have a lady that wants to pick up a cake on a Friday evening. SHe will then be traveling with it on Saturday, but the party isn't until Sunday, which is when the cake will be cut!

Will an iced cake stay fresh for a few days? I am making a sheet cake.

It should, I've done cakes on about that schedule when I've been traveling.

The cake itself should be fine, but you'll also want to consider the filling that you're using. If you're using a buttercream, no problem. If you're using anything that needs to be cold, then she'll have to refrigerate.

If you're using something like a cream or a lemon curd or something like that, be aware that the filling might absorb a lot into the cake, so you might consider using a thin layer of buttercream to prevent that.
