i found earlene moore's recipe for italian cream cake and it looks great. just one question, it calls for 1 1/4 cup wesson. does she mean wesson vegetable oil? can i use my regular canola oil, or is the wesson really an important thing to get? thanks for any help!

I would think she means veggie oil.

I made her white cake this week end and oh my gosh!!! It is sooo good!!! Using for a wedding cake.

I regularly substitute my oil with applesauce, so I would imagine you can use canola instead of veggie oil.

anytime the cake calls for oil, I can sub out for applesauce??? that sounds good. I know that it can make a cake moist but does it change the flavor??

I know this may sound silly, but what is the difference between canola oil and vegetable oil?

I have never noticed a taste difference when using the applesauce, not has anyone ever asked about it or mentioned it, so I assume it's not enough to change the taste (that it's not just me).

tziona, as for the difference in veggie to canola oil, I don't know exactly. I did look it up once, but can't remember the details. I do know that the name comes from Canadian oil low acid = Canola. Also, for a while there were urban legends circulating all over about the health dangers of using the product. They're, of course, false. See http://www.snopes.com/medical/toxins/canola.asp

Other than that you'd have to look it up yourself (internet search) or maybe someone else here knows.

veg oils are usually a combination of lots of different types of oils from several vegetable sources. unfortunately that means they may contain saturated fats from palm or coconut oils. canola works just the same, but its pure canola oil instead, which means mono unsat and poly unsat fats, a little healthier for you. icon_smile.gif

Also, vegetable oil usually contains at least some soy oil. Since some people are allergice to soy, going with pur canola is a better option for cakes that you sell!
