Cake Serving Charts - Which One Do You Use?

I had a bride call me out on the # of servings I told her on a wedding cake. I printed off 6 different charts and found 6 different #'s of servings. Of course she was looking at one that showed a 9" cake serving 8 people - i've never seen this one!

Which chart do you use?

I use Wilton's party chart. It allows for slightly larger servings, but still wedding cake small.

I made my own charts. Turn the cake pans over, trace onto parchment paper and mark off 1x2 slices for square/sheet size pans. For rounds, I folded them into equal wedges and counted the slices. If you are making a two layer cake, by the time you add the filling and frosting it's pretty tall. 1x2 seems small when you are just looking at the cutting pattern. However, when you actually cut it it is a decent slice of cake-not a sliver but not a hunk either.

You know - it never matters which chart you use. It only matters how the cake is actually CUT. If you use the Wilton chart, for example, and the caterer has a different idea in mind about what a wedding cake serving is - then there's going to be a conflict.

I typically use Wilton charts also, but then I get most of my business from the same caterer, and I GAVE her the charts!

If you don't know how the caterer cuts, you should tell the bride that you use the Wilton chart as a guide, but recommend ordering to serve guest list +10%. No bride I've met with so far has ever had a qualm with the possibility of leftover cake.

Thanks! I leave a copy of the cutting guide. I heard back from this particular bride. She admitted she was thinking of a single layer - no filling cake.
