Okay, here's what I've got. I am doing a bee hive cake for Sunday afternoon, when we get home. I have baked and frozen the cake, it is crumb coated in cream cheese, it's now in the fridge. I have made the Michele Foster's Fondant, and I am wanting to cover the cake and make bumble bees to put on it. When do I do this? Can I put it on a cold cake? Once I cover it in fondant, it will need to stay out of the fridge, correct? Thanks so much!

I have put cakes covered in MMF in the fridge & they were fine. I don't know about the fondant your talking about but I guess fondant is fondant right? I'd make the bumble bees tonight so they will dry. 1/2 fondant & 1/2 gumpaste is what I use~

I have done this. If the cake if very cold the fondant may sweat a bit but if you don't bother it it will be fine. I put a fan on mine to help dry up the condensation and it worked just fine. I've never used that fondant before though.

Just a guess, is that you would have to wait until cake is at room temperature, just because of moisture under the fondant. What I meant to say is, if the cake is cold the fondant might cause the cake to sweat because the moisture has nowhere to go but through the fondant. Might wreck it, I'm not sure. Hopefully, somebody else will answer your question as well.

I am thinking that if the only issue is sweating, if the fondant's on cold cake and goes back in the fridge, there shouldn't be a problem....Right icon_confused.gif I have put a fondant bow, Wilton, in the fridge over night and it didn't break, but I've never covered a whole cake. I'll let you know how it goes, maybe. It's just for my sister's b-day so if it's a flop, I'll just cover it in extra cream cheese and go on, she'll never know! icon_biggrin.gif Thanks!

Do you have to put it back in the fridge? I have before but it wasn't for a wedding or anything & it was fine. But I forgot about the sweating. If it were a wedding cake I don't think I'd put it in the fridge.
Just saw that it's covered in creamcheese.. that's why your putting it in the fridge LOL~

I would think it would be more of a challenge to cover a really cold cake...it would too firm. When cakes are at room temp, its much easier to smooth the fondant because they 'give' a little...ya know what I mean?
I have never had a problem with sweating...that really depends on where ya live. thumbs_up.gif

I like to cover my cakes when they are solid and cold - for exactly that reason: it doesn't give. You do have to have the bc about perfect though.

so... YES you can cover it cold, YES you can put it back in the fridge if you like, and YES you can leave it out with the cream cheese icing if you like as long as there are no other cream variables that you haven't mentioned.

Uumm, my recipe only uses butter, cream cheese, powdered sugar, and vanilla.
I was thinking I would like to cover it before church, then pullit out when we get home and let it sit out while we eat lunch. That way I watch it and see what happens. icon_rolleyes.gif

Yes! It's over! There were some small errors, like the fondant ripping in the back, but I just patched it( it was for family), and I forgot to add the door before adding the yellow. Anyway time wise I only spent two hours on it, the coloring of the fondant, making the bees, and covering the cake, that's not bad considering it was my first time working with this recipe and the second time with fondant.

Anyway, the recipe was good. It was sweet, very, but it's just sugar for pete's sake, so I was pleased with the taste. The texture is a little different, it crumbled and cracked very easy. I'm not sure if it was me or the recipe, but I'll try it again!

Thanks so much for the replys, I consider it a success for me! I know it's not perfect, but I am pleased! Thanks again! Katie
