I have volunteered to make dessert for a Teacher Appreciation Luncheon for two different elementary schools. There will be approximately 45 at one school and 60 at the other. I'm thinking that with all of the food they probably won't want a large dessert so i'm torn between photo image cookies and/or a cupcake cake. Has anyone made a cupcake cake using the mini - bite sized cupcakes? I'm wondering how hard it would be to ice them together. Any suggestions?

I make mini-cupcakes all the time and I have made them in CCC.
Check out these pics. With the t-shirts I had 170 cupcakes I made 2 large ones full sheet size and then little ones. With the Iron Giant i think I had 44.

I am also making some Teacher appreciation days cakes. A few days ago I found some great pics, but the search feature is not working right now.
I will be making a book cake for one of the cakes next week. With FBCT and Gumpast and Chocolate it will be fun.
The other is for my daycare and I think I might make cupcakes for that one. Still working on that design,
