I'll be assembling a cake on site and need to know the best type of 'glue' to use for attaching gumpaste flowers to dried fondant. Stupid me didn't think in advance to put the flowers on toothpicks.

Try using some really stiff royal icing. This should work.

A dab of royal icing or buttercream, that's what I use all the time! Good luck!

Thanks. I thought so, but wasn't sure and the more I thought about it the less sure I was, so I had to ask. Guess I'm just a bit nervous about stacking the cake at the restaurant.

Don't be nervous! I'm sure you'll make out great! Show them how professional you are while working. Most of the time, the restaurant staff are too involved in their own jobs to pay attention to what you're doing.

Don't forget to ask for the manager when you're done to point out what needs to come off before cutting, and to let them know the flavors, AND ask if they refer vendors! Introduce yourself and let them know you're available for more weddings! icon_wink.gif

If you dissolve some fondant in water, it makes a really good " sugar glue "

Thanks, Jules06. I just didn't want to have to bring any fondant with me to the party. Between getting there late and my three kids (mostly the toddler and the diaper bag) and the cake itself - I didn't want to have to worry about the fondant possibly drying out and getting water to use with it, esp. in a state that I don't know how their water quality is.

put 2 tbls of water in a small jar and break up small pieces of gumpaste and stir it in till it disolves completely. let it sit in the fridge for a few hours and you will have a thick glue like liquid. brush it on and it will work like super glue and it sets fast.

I actually use that 'solution' when working with gumpaste of fondant that isn't completely dry, except I don't refirgerate it. Would it be strong enough to hold flowers onto dried fondant? I didn't think it would work, but then again maybe being refrigerated thickens it up. I've got to try that in the future since this cake has already been done and set up (as of yesterday 4/28/07).

the cold does help thicken it and ive never had it fail me.
