Anyone out there know of a good royal icing recipe for making the RI Tiara?

Most any royal icing recipe will do. There is a tutorial for making a RI tiara in the articles section.

Standard royal icing: 4Tbls meringue powder , 1 pound powdered sugar, scant 1/2 cup of water.

There are other recipes in the recipe section.

You may be having the trouble that I was at first. I was used to the RI that I coated cookies with (very very thin!). However, then came along the above mentioned recipe that we learned in Wilton Course II. It should work just fine for the tiara. It is very thick!

My recipe:

some egg whites
a little cream of tartar
enough powdered sugar
beat with paddle.

sugar depends on the application icon_smile.gif

Now if you want a RI that is stronger than that then you want to use egg whites and powder sugar mixed together. The only draw back is that you need to use it all at once. You cant rebeat it like with merigue powder. I do use this for fine string work and pieces that I want extra strong. One egg white with enough ps to mix in is all that you need for most pieces.

I make my RI with eggs white too and I also rebeat mine with no problems at all.
