How do you handle inspections?

I will only rent kitchen as I need to so if an inspector showed up, I might not be there.

Also, how about storing your food supplies. I hate to leave a refrigerator full eggs, milk, etc., and take a chance of them expiring before I had another order.

I am sure the inspection rules differ .......anyone renting kitchen space in Austin, Texas or Travis County?

i dont rent a kitchen, but in colorado if you rent a licensed kitchen the inspection falls completely on the place that is licensed.

I rent a kitchen and my inspector said that since I come in as needed and only work at night, he would have to call me to come in for the inspection.

As for refrigerated items, I buy my food as needed. Whatever I don't use that night, I take home and keep.

I rent in Williamson County. As far as inspections, since it's not "my" kitchen, I've never been notified that I need to be there when it is inspected.

I only keep refrigerated items there if I know I have another order coming up soon. Otherwise, I just keep a shelf of dry goods there, flour, sugar, salt, leavening.

I do what SweetArt does. Also, my inspector has to call me to set up an appointment, since I only work when the shop is closed and I don't have set hours.....

How did you Texas bakers find a kitchen to rent? I live outside of Waco and have no clue how to approach a business. I don't know any restaurant owners personally, so how do you approach someone and ask if they would rent their kitchen to you???

I posted an ad on craigslist. "Wanted: Use of licensed kitchen 1-2 nights per week in order to get my cake decorating business off the ground". I got several responses.
