What If I Forgot To Add Meringue Powder To Icing?

I just made all my frostings about 2 hours ago...I just relize that I forgot to put meringue powder in in?....I made wilton recipe buttercream and chocolate buttercream...Can I just add the meringue powder to it now or will it be ok? HURRY AND HELP ME!!!! icon_cry.gif

I never use it, only in royal icing.I just use crisco, conf. sugar, vanilla, water, or milk. I think it will be OK. Anyone else?

I actually only use it for royal icing and roses after I, too, forgot to put it in. I was also told by another woman who had been teaching cake decorating for years and years that she only used it in royal icing.

I always understood that using meringue powder in your buttercream was helpful in making your icing stand up to heat and humidity better. I've never use it in my buttercream, but when I started my Wilton classes last week, I figured I better follow their instructions and use it. I'm such a good student! lol I didn't notice ANY difference, so I wouldn't worry about forgetting to add it.

I believe that it helps it crusts better. I have made buttercream without the mp and it was fine. Your icing might be a bit more "heat" sensitive from your hands when decorating. Just put your icing or cake in the fridge for a few mins and all should be good.

The icing will be just fine without the meringue powder. I took the Wilton course last summer and did not use it in one of my cakes. My instructor commented to the class on how perfectly smooth my cake was iced and it's the meringue powder that allows the icing to crust over in order to do that. Then I told her I was out of meringue powder. icon_biggrin.gif
