How Long Will My Cake Last?

I made a cake yesterday, planning to decorate it last night and this morning, but didnt have time. It has bc and mmf on it now, and I've been keeping it in the fridge. How long can I wait to decorate it? If it wont hold, I'll just serve it tonight but if it will, it would be nice if I could make it look nice before we eat it. (its not for any occasion, just for practice) Thanks!!

according to the link, the cake should last 3-5 days after its been covered in the fondant. i've never tried it that long, mine are always gone after about 2 days.

ps, have you used mmf fondant before? everything i've read says to not refrigerate it.

It is MMF!! I didnt know you couldnt refrigerate it. I kept it in the fridge last night and it doesnt look any different today. Haven't tasted it though. Hopefully it didnt ruin it.

when you take it out of the fridge it'll prolly start to condense, and you'll get some water on it. but, i think that if you don't touch it until the condensation has completely evaporated, it'll be fine. the fondant will seal in the moisture, and the cake will keep very well on the counter, so there really isn't any need to put it in the fridge. (unless you used a filling that requires refrigeration, but in that situation i don't know what will be best to do) icon_razz.gif

It is OK to refrigerate fondant, and the cake will stay fresher if refrigerated.

The condensation forms most when the temperature change is dramatic. If you take if from the fridge to a cool room, the condensation will be minimal, and evaporate quickly. In hot weather, the condensation might be heavier. I can effect bright colors and make them bleed. Otherwise, it should be fine.
