Hi,

Whcih brand of dutch coco powder gives the best finish product for cake and frosting and where can i purchase?

There a lots of brands of Dutch cocoa, but I find Hershey's is fine for most things. you can pay twice as much for Valrhona or others, but the average person may not appreciate the subtle differences.

I found a brand of cocoa that is a blend of both, and I really like it. I think it is by Saf, the company that makes powdered buttermilk, at least here on the west coast.

I use a mixture too, I wonder if it's the same. It comes in a circular container and is actually less (for more) than regular cocoa in Safeway. I read once that if a recipe calls for dutch then you should use it due to levening issues, but I have had no problem with the mixture and it tastes great!

The one I get does come in a round, almost cardboard can. I haven't had issues with switching cocoas, but I know that with some recipes there might be a risk.
