I have personally met Colette Peters twice. She is wonderful and so genuine. I felt like she had been a friend for years. I met her at Ices this year I saw he on the streets of New Orleans and shreiked OMG that's Colette and she laughed. She took a few minutes to say hello and I asked her a few fondant questions and then appologized cause I felt like a stalker, she just laughed. She gave me a hug goodbye and went along her way. I later met her in the author room where she was signing her book, she remembered my name and posed for a pic! I know that doesn't help with your decision but I like when someone is an everyday person. Good luck with all the plans and keep us posted.

wow I just read the recipe on Martha Stewart's site and I don't think I will be trying that for a while... seems awfully time consuming. Besides the one I use is just plain old BC and everyone loves it, it's quick and easy to work with and I can leave a cake sitting out and not worry about it spoiling. One of these days though I will try it and I will let you know what I think of it, I am not going to completely knock it before I try it. icon_smile.gif

It seems to me that all the big name cake decorators have staff to do all their cakes. I'm just a beginner and I do understand they are busy but I've alsways wondered what are you actually paying for if the staff does the cake. Is there any way to really know who is doing it? Maybe the staff bakes and does the basics like icing and the decorator does the intricate stuff? I would love to be a fly on the wall to hear/see their response to that question?

Well, in Sylvia's case, she openly admits she does not bake anymore (I think she's about 80 years old, so it's understandable) but I think she and Ron are the "designers" and the staff executes the design. Sylvia and Ron are the ones that meet with you, feel you out, get a sense of what you want, and propose designs that they feel you would like. Then, if you contract them, the staff puts the plan into action.

This is a dragon...long story...but it is very much about my husband's secret love of of stories having to do with knights slaying dragons...lol!

Both cakes were unreal. I am still wondering how Sylvia got that buttercream so PERFECT and SHINY! She uses IMBC.

Another picture of the grooms cake....

The girl kissing him is a friend of ours - we brought the grooms cake up to our sweet for an after party (at like 2 AM!!!) and the dragon was a big hit! My husband took great pleasure in taking the dragon's head off.....men.....lol.

So, have you met with Colette already? Tell us, tell us...

Would you consider doing your wedding cake with one decorator and the groom's cake with another one???? Maybe they wouldn't take the order??

I'm assuming Colette bakes from scratch, at least she includes recipes for her cakes in her cake decorating books. Even a recipe for fondant.

just beautiful...................im soo happy for you i agree with the other post best of both worlds.......something just perfect for a wedding and yet just differnt enough for the grooms cake .... i love that grooms cake .....I say when i get married again ( hopefully to my husband j/k) I would like to do the same have all the fabulous stuff that i missed out on ......
