Good Morning everyone!! I'm getting ready to make my first cupcake cake for my son's Christmas party tomorrow. Very nervous!! icon_surprised.gif My question is: How full should I fill the cupcake liner to get a nice cupcake to use for the CCC?? I read that you need to have a flat surface cupcake. icon_confused.gif

I've made cupcakes by filling cups half full and a little more then half but baking at only 325 instead of 350and they come out just at the tip of the cup. Of course I also have filled them the 2/3 full and once they were done (still baking at 325) I have flipped them over on their tops just as soon as I took them out of the pan.....
I am sure others that have made a ccc can help you better......

I always use the large cookie scoop from Pampered Chef. I just measured it and it holds 3 Tablespoons. They are usually end up pretty level for me and I still bake them at 350.

Hi Denise,

Thanks so much for your get well...it meant alot.

When I did a cc monster for my son's birthday, I filled them 2/3 full and baked on 325.

After I took them out of the oven, I put a cookie sheet over them as suggested by Calidawn and pressed down so that they would all be the same height and it worked.

Unfortunately, I didn't get to take a picture because by the time I finished decorating I was running late for a club meeting and when I got home, my son had gone into it...he throught that I had left it for him to eat since he knew that it was for his birthday...kids icon_cry.gif

Haven't had a chance to do another one.

I use an ice cream scoop for my cupcakes. It helps you get them close to the same height. If I have some that are a little taller, I usually arrange them close together then go from there.

i have done the same thing.....you could also level the cupcake with a serrated knife if they are too puffy (I had to do that once before. icon_wink.gif )

..I use my cake leveler! I set it at a certain height (don't know how high, off hand) and any cupcake that doesn't clear under the level gets cut off!

Thanks so much Steph!! He's kind of plain...but Doug made a really good suggestion to spinkle white sugar on him for that snowy look. After making everything else...I was so tired...that I just kind of threw him together. icon_redface.gif I was really proud of my cookies. They turned out way better than the ones I did for his class on Halloween.

Hi jekizer!! Thank you sooo much for your wonderful compliments!! icon_biggrin.gif OMGosh...potato candy is sooo delish!! It is made with mashed potatoes. I know...it sounds yucky...but it is sooo good!! If you like..I can post the recipe.


I think that a cupcake cake of a Christmas tree is a great idea!!

Doug, I had a little bit of a secret online crush on you after learning you had a passion for theater AND baking, but now after knowing that you actually LIKE raw potatoes, I'm not so sure.

back to the original topic:

I made my first CCC (as a Christmas Tree) last night (see other posts for filling for the CCs)

It was very easy...almost too easy.

Used the two spatulas trick to get relatively straight edges.
No problems with falling between the gaps.

Only problem: oy! have to start earlier so I'm not finishing after midnight!

I have to admit also...I like potatoes raw. My middle son would rather have a potato raw than cooked!! My 78 year old aunt use to make us this candy all the time. She is not in good health now...so now I've been making for us. I hope that you guys like and enjoy. icon_biggrin.gif

Potato Candy

1/4 cup mashed potatoes (nothing at this point to should be added, just a plain potato boiled then mashed.)

2 Tablespoons milk

1 teaspoon vanilla (I've even put a tsp of almond also)

a good dash of salt

4 to 5 cups of powdered sugar

Peanut Butter



1. Mix together first 4 ingredients.

2. Add sugar until it's a dough consistency. Usually it takes me about 4 1/2 cups. It will still be a little sticky.

3. Roll out dough onto powdered sugar covered wax paper.

4. Spead peanut butter over the dough.

5. Roll it up like a jelly roll.

5. Refrigerate over night...then slice. It's kind of like a pinwheel.

I just recently made a snowman CCC for my nieces sunday school.. After posting it, my sister showed it off and now I have a request for a christmas tree CCC. With about 22 cupcakes, how do I price this.. Can't do matrix, I don't have excel.. Any ideas?? TIA

First off -- i hear ya on the midnight thing -- had my family party last weekend and was up till 3:00am finishing the cakes! darn my perfectionist personality!!!

But you've got my curiosity piqued ------ what do you mean by "two spatula trick"? I haven't heard of this before -- or at least i don't think i have!!
