Cookie Pricing - Sorry!

I know everyone hates pricing questions, but here goes:

I have my first request for a big cookie order -- 100 cookies, a 4 inch round/scalloped. I'm going to cover them in MMF and do a monogram in royal, then wrap each in a cello bag with ribbon trim.

I told the woman they'd be $2 each, which I think was a shock to her. What do you think? I mean, it's a big cookie, and time consuming!!!

I think $2/each is a steal! I would charge at least $3.50 for that cookie as described! Most of my cookies are $4 each for more detailed shapes/designs!

Also, there's another thread going (just below this one) that involves cookie pricing...may want to check that one out!

I think she's getting a great deal, some cookie bakers would charge at least that and extra for the ribbons!

Where in CT are you?

I think for that many there are a few things to consider.

1) They are all the same so you can do assembly line
2) There all individually wrapped (make sure you price out the$ for these)
3) With the royal icing you are going to have to have enough room to let them all dry
4) What type of recipe is it?
5) Do you have any overhead? Building rental? Utilities?

I think for that many I would charge $3.00, as long it was my sugar cookie recipe. I would be saving time being able to do that many assembly line fashion, but it would still take quite awhile.

I am in Granby, quite a ways from you!!

So now this woman is trying to bargain with me!! I told her I could cut her price if they weren't individually wrapped and/or if she wanted a smaller cookie. Now, she comes back with...instead of the four inch circle, she wants double bells, at four and a half inches, and says she will wrap them herself! I'm thinking, no way to wrapping them herself...I would have to get them to her fresh, several days in advance so she has time to wrap....what do you think??

How bad do you need the money? Otherwise stay firm on your price, which I think is already very reasonable. Do not cave just because SHE doesn't know what they cost and how much work is involved!

I say good luck in finding someone else to do this job for you! Yeah, its always fun and exciting when someone calls us for an order, but thats just it, THEY call US!! FOR A REASON!! dont be ashamed of your prices or your work, they come to you, just remember that!! thumbs_up.gif

i had a woman contact me about an oscar cake (see dreamgirl cake post) and i told her if she let me design it incorporating the theme id charge her $40 and incorporate dreamgirls and add lots of sparkles..
she replied back that she wanted the rainbow record on it (i looked it up real quick and nothing came up right away) and dreamgirl stuff on it and sparkles and could i keep it at $30

what did she not udnerstand about my email? UGH!!!!!

Pricing is always so hard for me - I just did a cookie order for delivery today for 5 dozen - I charge $20 a dozen and it was sooooooo hard for me not go give here a break! But I stuck to my price and she was fine with it. Just think of all the work that goes into them - It took me several hours to bake them and then another 4-5 to decorate since it was all royal icing with several different colors and 5 different cookies (all beach theme). I guess you have to decide what your time is worth!


But I think $2 is a steal so don't Cave!!! icon_lol.gif

I would automatically add $3 per dozen for bagging and bowing those suckers. Its enough to cover your costs, and enough for her to say, never mind, I'll let you finish the job. Also, if she bags them herself, how will you get any referral business? Bagging them yourself gives you 100 more opportunities to put your label out there. I consider that with EVERY order I accept - is it a frequent buyer or a new customer? Is this a part of town I'd like to get my name around in? By all means bag them and LABEL them so you can get future orders. That is how I get probably 3 or so new calls a month... that turn into more loyal customers who spread the word and place continual orders. And your price is fair for the circles, but I would charge more for the double bells... just as difficult to transfer soft dough and distort as the circles would be... just my thoughts.

Those bells will involve a little more decorating - don't cave in as far as your price, matter of fact tell her the bells will cost more. I also would not let her bag them. Would you consider letting her buy the bags and ribbons to give to you to use? Still would not change the price though.

Thanks so much guys! I knew you'd back me up thumbs_up.gif It will be tough for me to stick to my guns on this one! I definitely don't want her bagging them. I would LOVE to label them but they are for a shower at my DH's office, and he works for the Dept of Public Health ( thumbsdown.gif I'm not licensed) so I can't do that icon_sad.gif

Oh, and did I also tell you that at first, she wanted "Yolanda & Dave 4/11/07" on each cookie?!? This woman is very nice, but crazy!! She has ordered from me before, but just truffles, and she's been great in the past, so this is a tough one!

Stay firm - your work IS worth it!! People do like to feel like they've gotten a deal, so maybe you could find a way to point out to her somehow that she is getting one. I often say things like, "Normally I would charge (a set up fee, a design fee, etc. fill in the blank here), but I'm waiving that for this order." Keep us updated!

okay, I sort of stuck to my guns...I told her I did not really want her to bag them because of concerns about getting them to her well in advance and they could get stale. I told her if she insisted on bagging them, I'd take $25 off the total, but that's really a wash because I was going to include the cost of the bags and ribbons in the $2/piece price. I also offered to do a cardstock "tag" instead of a ribbon, which included their names and the wedding date, since she's so insistent on getting the date in somewhere...all for the $2 price. So, I tried to make it look like she's getting a good deal....and she is!!!! I'll let you know what she says.
