I roll mine 1/4 inch thick. You can use dowel rods
on either side of the dough as an accurate guide. I roll my dough between 2 sheets of parchment paper and put the rolling pin on top of the dowels to make sure the cookies are all the same thickness.

I like mine about 1/2" for cookie bouquets. I made some 1/4" the other day just putting into goodie bags and they were the perfect thickness, but I baked them too long and they were kinda crispy, so keep an eye on those 1/4" cookies! ![]()
I use the 5/16" dowel rods (in the craft dept.) cut them into two or three pieces and roll out my dough using the rods as a guide. I place my rolling pin on top of the pins. This seems to be the perfect thickness if you like your cookies to be a little soft and not at all hard!

I was wondering how thick you roll your cookie dough? I just bought the dobord today and can't wait to try it out....hopefully my dough will all be the same thickness. About 1/4"?

I roll mine just slightly thicker than the cookie pop sticks. This way they are not too thick.
The thickness also depends on the cookie recipe that you use as well. Some cookie recipes are best for thin cookies and some best for thicker cookies.

If you are making cookies on a stick how long does it take you to start to finish? If you are using the no fail sugar cookie recipe how many of the thick cookies can you make? How many do you bake at a time? How long do you bake them for?
I just got through with an order and I got about 30- 3 inch cookies that were about 1/4 inch thick. I put about 6 per tray because I bake with the stick in. It takes them about 13-14 minutes at 350 degrees in my oven.
I just stumbled on this tonight through a link from Peggy's website. They are $8 for 3 different thicknesses. They just look like painted pieces of balsa strips to me. Peggy suggested cutting up a wooden yardstick and layering them for the thickness you need.
