What Kind Of Mat And Roller Do You Use For Fondant?

I purchased a silicone mat from Williams Sonoma but I am not very happy with it. It does the job, but tends to move around way too much.

I am also using the long Wilton fondant roller. I recently visited a large commercial kitchen and noticed they had these large (not necessarily longer) stainless steel rolling pins in their pastry prep area. They were about 4" wide and the length of my long Wilton roller.

I was wondering what kind (brand and size) mat and roller all of you are using. I am new to fondant so I could really use some input.

In an ideal world, money being no object (wishful thinking, right?), what mat and roller would you purchase for yourself? I hope I don't regret asking that! LOL

I'm no pro, but I remember reading in a previous thread (I think it was the one about sharing secrets) someone's idea to buy that clear plastic they sell at the fabric dept. at Walmart - it looks like granny's furniture covers. I heard it worked fantastic and you can buy a large cut to cover a section of your counter, taping underneath. Because of the size, if you got a large size and a thicker variety I wouldn't think it would slip around too much. Someone also mentioned taping a large dowel/wrapping paper tube to one side to roll and store and also help for support when you transfer it to the cake.

The mat I use (plastic fabric) does slide at times. I just tape it down. I use a heavy rolling pin (Good Grips), ordinary length. The extra weight really helps. If I have to roll large pieces, I generally roll it between two sheets. makes it easier to manipulate.

I use a Roul Pat Mat, it is the same as the Silpat silicone mat, but much larger.

I use the vinyl from Walmart and I like that it slips a little. Cuz I'll roll it and than turn the entire mat. It is FABULOUS.

I use the large Wilton rolling pin. I used to use that flimsy mat from Wiltons as well, but now I just use my Silestone countertop.

I bought a silicone mat, probly 3 feet by 2 and a half feet, off of ebay last year. It was close to 40 bucks. I LOVE the thing...covers my whole crafte table...well, almost...and I can my mmf out big enough to cover a 16 inch round cake, two layers tall...I just pick up the whole mat, fondant attached, and lay it over the cake, then I peel the mat from the fondant...

Ateco makes a new mat for fondant work, it's huge, silicone based and doesn't slide at all. Any roller will work as long as it doesn't have handles.

I bought a fondant work mat by Ateco. Found it cheaper doing some seaching on line for around $29. I LOVE it LOVE it LOVE it. It is really big and it stays on the table without moving around. I just use a regular old rolling pin at the moment.

I was looking for a mat at my cake supply store last week. The owner suggested the vinyl from Walmart also. I needed to roll out 24". Yikes! He said that Silpat that size (they didn't carry it ) would probably cost me $75. I bought the heavy duty vinyl for $3.24 for a yard. I was able to cut one big piece and two med/sm ones for other projects. It doesn't slide on my granite counter, and I can pick up the whole piece with fondant attached to help me cover my cake. Worked great and saved me a bunch of money!

I think I'm going to try the vinyl from Walmart, too. What thickness did you get. I noticed they vary from thin to very thick.

I bought the thickest one they had. There were a few different ones. The one I bought had orange writing on the paper that is rolled up with it ( so it doesn't stick together) and it said "HEAVY".

I've tried just about all of 'em and always go back to using Reynold's Freezer Paper. I don't need to use Crisco or cornstarch or anything to keep the fondant from sticking. And when I'm done, I throw it away, which cleans up my work area with no effort. icon_biggrin.gif
