Fondant is a rolled icing that is applied to the cake, and can be used to make flowers and decorations. It does dry, but not hard. Some purchased fondant doesn't taste very good (Wilton) but most recipes make a delicious product.

Gum paste is generally used for delicate flowers and decorations. It dries very hard. It is not intended for eating.
