Fondant Vs. Gumpaste????

Hi, all ~

What is the biggest difference between fondant and gumpaste? I've read a few posts and it sounds like gumpaste is so much better.

Julie---I personally like gumpaste better than fondant. It's much more pliable and "forgiving" than fondant is. It's very easy to color also.
Some will say different though!

Okay I know fondant tastes icky, but it is edible. Is gumpaste edible? When you say more forgiving....is it easier to use without getting lines? As in lines when you join 2 pieces together?

Gumpaste dries very hard so typically not edible. When I say it's more forgiving I mean that as long as you work with it, you can mess with it over and over again. If it gets a little sticky, you just lightly coat your hands with shortening. I would find when working with fondant that it would start to get hard, even while I was working with it. With my gumpaste I use a small amount and the rest is under a glass or in a ziploc bag. Fondant just seems drier to me, if that makes sense?!

You can cover a cake with fondant ... some versions are not very tasty, others are sweet, but not bad. Gumpaste is technically edible, but not really intended to be eaten.

Gumpaste can be rolled paper thin and dries faster and harder... fondant stays soft inside for a long time.

Gumpaste is incredible for flowers and other sculptures and you can get amazing detail. Fondant is more like edible play-doh ... you can sculpt with it (I do all the time) but it is difficult to get really fine details.

Gumpaste dries very fast so is not very forgiving if you don't work quickly.

You can mix fondant & gumpaste 50/50 to get a medium which has some of the properties of both!
