New Piping Gel Recipe (It Actually Works!!!!)

Hey everyone I found a piping gel recipe that actually works!!!! 1/3 cup sugar,1 tablespoon cornflour,1/4 cup lemon juice,1/4 cup water.
Combine sugar and corn flour in a small saucepan, gradually add juice then water. Stir over high heat until mixture boils then thickens. Colour as desired.
Last for a month or so in the fridge. JUST make sure there are no lumps in the completed mix. Hope this helps everyone. icon_biggrin.gificon_biggrin.gificon_biggrin.gif

Awesome, thanks! Do you know if this works for all applications? The only time I have used piping gel so far is to make Wilton's stabilized whipped cream. I wonder if this would work for that too, or just for decorating?

I had found one on baking 911 that I had not tried yet...2 envelopes gelatin, 2T cold water, 2C light corn syrup. Do you know anything about that recipe? I just did not want to spend $3 for a cup of piping gel....

I keep hearing about piping gel but have never used it. What does everyone use this for?

joby1, do you boil the ingredients with that recipe? I have tried one that is similar & it was horrible. I think it might be the same one but can't remember for sure. It didn't do anything but get hard & sticky. I wasted 2 envelopes of gelatin. icon_sad.gif

Tug: piping gel is that icing that looks like a gel, it's glissening and many use it to make "stained glass" or to make balloons or the such. Was I of any assistance or did I confuse you? icon_cool.gif

I have not tried it yet but the instructions are:

1. sprinkle the gelatin over the cold water in a small saucepan and let set for 5 minutes. Heat on low until the gelatin has become clear/dissolved - DO NOT BOIL

2. Add the syrup and heat throughly

3. Cool & Store, refrigerated, for up to 2 months

Thank you. It sounds like you basically use it to draw? I also heard of people mixing into whipped cream, etc. Why wouldn't you just use coloring paste or coloring powder?

joby1.. That's the same recipe! Several of us CCers tried it about a year ago & it was horrible. I don't think it worked out for anyone. Most of us who tried it lived in the south... I see your in TX... I think humidity played a big part in it not working out. Good luck! Let me know if it turns out for you.

I tried the whole corn syrup recipe for piping gel and found it didnt sett hard enough for me, but with the recipe using corn flour (starch sorry) It works well it holds the colour, holds it shape and isnt suseptible to heat like gelatin is. Any way I just found that it worked great for me with my outlines ect with my decorating.

I'm gonna give this a try. I tried the other recipe and it was TERRIBLE!!! I've just been buying Wilton piping gel at Hobby Lobby w/the 40% off coupon, but any little way to save a few $$$ is a good idea to me. Thanks for posting.

Does the cornflour make the gel cloudy? If it does, arrowroot powder (probably available from health stores in the USA), will give you exactly the same results as cornflour - but it will be crystal clear when cooked through.

Great thread....but then again I think, just one more thing to make........

(i.e. Even though I love MMF I still really, really, really prefer the convenience of Satin Ice and I think the piping gel will apply here also.) icon_sad.gif

The "other" recipe was terrible. I used it for water on a Polly Pocket beach cake. I put the finished cake in the fridge. The next morning, the gel had slid off the cake. I had to scrape it off and try to repair it. My friends said it looked like the levee broke!
