I am baking and decorating 60 cupcakes for a family member's large easter party. How long in advance should I start baking? I have frozen cakes before and actually prefer the taste, but I do not think that I should experiment with freezing cupcakes five days before the event.

I was thinking about baking on Thursday night and decorating with BC grass and attaching MMF bunny faces (which I will make tonight) to the cupcakes on Friday. Will they taste ok on Sat?

I want to make a good impression because, eventhough I am not going to be reimbursed for labor, this could be a good event to introduce my cakes to the neighbors.

cupcakes freeze great, just like cakes. The only potential problem, is that the tops can be sticky once they thaw. But since you are going to cover them in frosting anyway, it won't matter.

If they are for a Saturday function I would only make them on Friday... they will take you no time to bake... 3 x batches of 24 and you have 72 made... easy.

The buttercream grass will be a flash as well... an hour max and the other stuff you can pre make.....

I wouldn't make them any earlier than Friday... and what a pain it would be to freeze those cupcakes just to save a very little amount of time.

I have often done bulk order cupcakes... in excess of 100 and always do them the day before.... if the order was massive maybe do ahead or at least make the decos early... that part I agree with.

I would do them the night before. I have done 300 the night before. Frosted them and decorated them the next morning. Cupcakes are a piece of cake! Literally. LOL

You would be fine to bake and decorate on Thursday. I like to put mine in the refrigerator.

I just did 6 dozen last week and they were fine. icon_smile.gif

I agree with dky, it's almost pointless freezing them. Then having to wait for them to thaw.

Just do all the prep work ahead of time. Make the icing and color it and store in air-tight containers, cover cake boards if necessary, etc. Friday night bake and cool and decorate. If it's a simple design you can even do them on Saturday morning.
