Holiday Eggnog
12 egg yolks
5 whole cloves
4 cups milk
4 cups cream
3 cups light rum (optional)
1¾ cups sugar
2½ teaspoons vanilla
1 teaspoon ground cinnamon
¾ teaspoon ground nutmeg

In a saucepan, blend milk, cinnamon, cloves, and ½ teaspoon of vanilla over low heat. Stir, and remove from heat just before boiling.

Combine sugar and egg yolks in a medium size bowl, whisk until light and fluffy.

Slowly add the milk mixture, a little at a time, while continuing to whisk.

Pour entire mixture in a saucepan over medium heat, stir.

Continue to stir until the mixture becomes custard-like in consistency. Be sure not to let the mixture reach a boil.

Pour the mixture into a serving pitcher through a strainer to remove the cloves.

Refrigerate the pitcher for 1 to 2 hours.

Remove from refrigerator, and gently stir in cream, light rum, remaining vanilla, and nutmeg.

Refrigerate the eggnog overnight.

Serve with a cinnamon stick or baking cocoa garnish.
