Lady Mandolin
Sugar Sculpture for a cake competition November 2017 in Calgary Alberta She is created from an internal structure of copper tubing and sculpted in modelling chocolate. Clothing is fondant, edible silk fabric, and modelling chocolate accents. The board is a technique recreating cork flooring using butchers paper, nontoxic glue, food color gels and confectioners glaze. The cake display board is 24 x 24. She sits @ 20" tall. She won first in Category (sculpted cakes) and second in my division (professional)

Elegant Wedding Cake
These are a couple of the prototype cakes for our Glamorous Wedding Cakes Workshop. Each workshop is unique to itself typically offering one element that is somewhat detailed or challenging. I love coming up with new designs and of course, passing along and nurturing the learning of valuable skill sets to new and upcoming designers. Man I love my job!
