Wintry Wedding Cake
This cake was created for the styled shoot for the cover of Austin Wedding Style Magazine. I was given an inspiration palette of white, silver, powder blue & navy. I was inspired by an amazing evening gown, which I patterned the focal double-barrelled tier after. The cascades are wafer paper, & real silver leaf is on the separator tiers.

'uga' The University Of Georgia Bulldogs Mascot
This is as lifelike an interpretation of UGA as I could do, complete with him lying on his iconic ice as he does for every football game in the blazing sun of Athens, GA. The field is dark chocolate cake with peanut butter cup filling, the body is red velvet cake with white chocolate buttercream filling, & the head is rice krispy treats. Decor is modeling chocolate and fondant.

Toucan And Birds Of Paradise Tropical Cake
A cake that I made to match the decor for a meeting of wedding industry professionals. Even the flavors match the tropical theme---bottom tier is Hawaiian Cream Cake & top tier is vegan/gluten free Chocolate cake with Bananas Foster filling. I Am Fire. I Am............death!
I had the unique opportunity to take Mike McCarey’s private cake sculpting class right here in my hometown of Austin. Normally you have to travel to Seattle, where he has Mike’s Amazing Cakes, but he was here in Austin, TX, for our cake show, “That Takes the Cake” & for the first time ever, he offered the class on the road. I JUMPED at the chance! it is a 3-day class where he helps you make your ‘bucket list cake’—the one you’ve dreamed of doing but didn’t know how. YOU choose the cake design & he helps you bring it to life. He does an incredible amount of research & engineering before you ever start the class, so the structure is already in place. My bucket list cake for a while has been a dragon. And then when I saw the movie “The Desolation of Smaug”, I thought Smaug was the coolest dragon I had ever seen, so I wanted to base my dragon from him. (And I am a HUGE Lord of the Rings GEEK! Even my cat is named ‘Eowyn’!) Mike said the structure of this dragon, because I wanted him ‘flying’, & with the large wingspan, was very challenging! The internal structure is made of a thick plumbing pipe & copper wiring. Smaug is solid modeling chocolate—-about 14 pounds of it! Mike suggested we make him of modeling chocolate instead of cake so that I can keep him indefinitely & use him as a display piece. The only cake part is the pile of gold he is guarding at the bottom, so I can simply make a new mound of gold & slide it in place, & then serve it from there while keeping the dragon intact. Brilliant! I actually didn’t finish him in the 3 days! As you can see by the picture of me with him the large scale—-he is over 32 inches tall, so he’s quite the beast! The amount of detail was insane. I spent most of Day 2 making ALLLLLL those scales! And his head took more time than we had in Day 3, so I still had to finish him at home! The cool thing about the class is Mike walks you carefully through every step, but YOU do all the work! He doesn’t do it for you. But he is AMAZING at breaking very difficult things down into achievable steps, & his knowledge & techniques are off the charts. I learned so much, & feel that the class was the best investment in myself & my business that I could have made. I am forever grateful! Plus it was FUN! Mike is awesome! Funny, kind, patient (VERY patient) & so helpful. I hope you love Smaug as much as I do! <3 “I am Fire. I am……………DEATH!”

Steampunk Wedding Cake
Oh how excited I was to get an order for a Steampunk themed wedding cake! In the initial consultation the bride said she was doing a Steampunk theme for her wedding, & I went “Oh cool! I LOVE Steampunk!” She was so surprised, & said I was the only baker she talked to who even knew what it was! Heck, I have a whole Pinterest board on Steampunk! LOVE it! When the bride sent me the pictures of the hat she was wearing, I immediately knew that HAD to go on the cake! Her theme specifically featured Steampunk butterflies & keys, so I incorporated lots of both into the design. The colors are the colors featured in the wedding. With the exception of the large flower on the hat, all flowers & butterflies are wafer paper. From the bottom up: The cake board is hand cut & painted to look like aged copper. The bottom tier is a Hot Chocolate cake with Chocolate Chip Cookie dough filling, which I painted to look like wood. Gumpaste & modeling chocolate gears & decor. The next tier up is a styrofoam dummy to ensure plenty of support for the topsy turvy corset, & it is wrapped in wafer paper featuring Steampunk keys & clocks. The corset is Disco Lemonade cake with Lemon Meringue buttercream filling & icing. Fondant & Cake Lace decor. The top hat is Black Velvet Oreo cake with Peanut Buttercream filling. Gumpaste flower & wafer paper feather.

Rustic Chic Buttercream Wedding Cake
All sugar wild English roses, anemones & leaves. Black fondant accents of 'raffia' & the heart with initials. Cosmopolitan top tier, White Velvet middle tier & Hot chocolate bottom tier with chocolate chip cookie dough filling, all iced with white chocolate Swiss meringue buttercream.

Scary Zombie Cake
* My client asked for an absolutely disgusting, scary zombie cake with the iconic hand reaching out to get you. I wanted him to look like he was crawling from a grave, but up at a realistic angle. That angle turned out to be quite the engineering feat & I learned a LOT about cake structure while making it work. The entire cake is over 2 feet long & 18 inches wide. The grave is half vanilla cake with white chocolate buttercream, & half Hot Chocolate cake with Oreo buttercream. The entire grave is coated in chocolate ganache with buttercream grass, crushed Oreos & crushed Teddy Grahams. The zombie is, naturally, red velvet cake on his back & rice krispy treats on the front. The headstone is also rice krispy treats. I have never used so many rice krispy treats in my life! The intestines & brain are modeling chocolate, the ‘blood’ is a chocolate syrup, & the rat is molded with raspberry flavored dark cocoa modeling chocolate. I got all clever & put cooked rice pieces all over it for ‘maggots’, but after a few minutes they soaked in the blood & you couldn’t see them anymore. Oh well. He was so huge & heavy I couldn’t move him by myself, so I couldn’t get him into my cake room to take pictures. So unfortunately, the only pictures I could get were at the party itself, The party was AMAZING by the way! This guy went ALL OUT!

Sea Turtle
Just loved creating this beautiful sea turtle for a sweet 12 year old girl who wants to be a Marine Biologist. The turtle body & head are rice krispy treats covered in gumpaste & fondant. The flippers are gumpaste. I found a gorgeous picture of a sea turtle in my research that was this beautiful & unusual color combination, so I emulated him in my painting. He is hand-painted with gel, airbrush color & edible dust. The cake is Lemon Velvet with Lemon Meringue buttercream filling, and palette-painted in American Buttercream icing. The coral & seaweed are isomalt.

Ghost First Birthday Cake
* This is one of my favorite cakes EVER! I just love everything about it. But I’m a Halloween nut, too. The precious ghost was inspired by Cuteology Cakes’ adorable Girly Ghost cake. The ghost is also the smash cake. She is a 4" round cake with a half ball cake on top, vanilla with white chocolate buttercream. Both tiers of the main cake are strawberry marble cake with strawberry buttercream filling. I giggle every time I look at the googly-eyed spider crawling on the middle tier. I really loved the effect of the black cake lace too!
