Colorful Present Birthday Cake
For my third and final class project cake which was for the Wilton Level 3 Fondant and Gum Paste Course, I created a fun and colorful present cake. I baked a 2-layer 8" white cake, filled and iced with homemade Swiss meringue buttercream, and placed it on a board I decorated with pink Wilton fondant the week before. In cake class, I covered my cake with green Duff's fondant, added colorful polka dots and a border, and topped it off with a matching pink gum paste bow I pre-made. I took the cake to church and the cake was so popular that not only was every morsel consumed, but tears were shed among the kids who missed out. I received a myriad of compliments as well. And most importantly, I had fun and learned a lot! (inspired by a design from cc user cib)

Chocolate Buttercream Ruffle Cake
For Sunday hospitality, I baked this deliciously moist cake using a Sweet Dreams mix. After baking, filling, and crumb coating the layers, I made ruffles up the side of the cake with tip 104 and a back and forth motion. Using the same tip and a similar motion, I made overlapping circles of ruffles on the top, working slowly inward to the center. I found the technique fairly forgiving for my first try, but I'm sure another attempt would yield much cleaner results. After getting the idea from a similar cake in a Joanne's flyer, I'm glad I decided to try it! In the end, the cake was a hit and everyone LOVED both the new box mix I tried and the aesthetics (which looked more difficult than they were).

Vanilla Bean Rose Cupcake
A first try with a new brand of cake mix (Sweet Dreams from BJs), these vanilla bean cupcakes were a hit. I used the box mix for both the moist vanilla bean cupcakes and the almost cream cheese flavored vanilla buttercream. To top them off, I used some maroon colored, Wilton style roses that I had piped using a chocolate buttercream, as well as some green piped leaves. I took them to my appointment to get my feeding tube replaced, and shared them with the wonderful, caring staff there in interventional radiology who have saved my life many times over, and become my friends.

Spring Flowers Basketweave Lemon Cake
This cake was my final project for my 2nd level of Wilton cake classes, Flowers and Cake Design. For variety, I made a lemon cake filled and iced with homemade buttercream. I used previously made royal icing flowers that I had learned throughout my classes and practiced at home to decorate my cake, including roses, apple blossoms, primroses, daffodils, crysanthemums, violets, and rosebuds, (and some buttercream roses for my mom) along with piped leaves. I also used a basketweave border I learned that day, and a shell border learned in Decorating Basics to bring my cake to completion.

Independence Day Roses
I created this cake for my final class of Wilton's Decorating Basics in June 2012. I made a white cake filled with whoophie pie filling and iced with homemade buttercream. I used a blue star border and topped it off with ribbon roses in a maroon color made from chocolate frosting.
