Emmett Everything Is Awesome!
(Everything is Awesome! Everything is cool when you're part of a team!) Chocolate cakes torted with buttercream and ganached with milk chocolate then covered in fondant. The hair is hand molded chocolate ganache, LOTS of it, and covered with a layer of fondant to smooth it over. The head is 6 inch cakes, carved, and the shoulders are an 8 inch square cut to fit.

Castle Cake
4/7/10 inch white cakes torted and iced with buttercream and covered in fondant. I don't have the traditional impression mat for the bricks, so I used a brick veneer for doll houses I bought on the cheap at Hobby Lobby- it does the trick. The turrets are gum paste. I keep all my paper towel rolls and craft paper rolls just incase! The tops are molded around ice cream cones, I wrapped the cone with wax paper to prevent the 'cone' impression and once it was dry I removed the wax paper and slipped it back onto the cone with some white chocolate. Each turret is secured with white chocolate 'glue' to the cake.

'the Jessica Harris' Bow Cake
I used Jessica Harris' bow template and tweeked it to make this inspired cake for a competition in Austin. It placed 3rd in the Adult Professional division for 'wedding' styled cakes. This cake gives both the bride and groom a little of both- sweet, structured and modern. This cake design would work well with any color since the bow pattern becomes a structured geometric feel. The pearls can be placed at the bottom of top the tiers for a new look. Tiers are 8/6/4 x5 inch cakes. Have fun!
