Sea Monster Alien Cake
Halloween cakes are my favorite to make. This I created at the last minute for a cake walk. The cake is pumpkin with carmel icing filling and then buttercream frosting. Used glass bowls to bake the cake. Face features are made from left over modeling chocolate and gumpaste from other projects. Used Neon Green Americolor. Love how it seems to glow. Really fun little cake

Love Bird & Cherry Blossom Cake
Cherry blossoms and birds were made from gumpaste. Nest was made from modeling chocolate. White cake throughout with different fillings and a simple buttercream frosting. I was nervous about this cake and the color but I understood the bride's vision and I ended up loving the green. It was an incredibly humid week (unusual for my area of the country) and I had difficulty getting the cake to set and the frosting to crust. This made carving it a challenge. This created more of a hill like effect rather than an crisp angular tospy turvey that really worked well with the bird/flower decorations in the end. Bride loved it so I was happy.

Gerber / Gerbera Daisy Wedding Cake
This was my first ever wedding cake, so I was thankful the bride chose a more simple, yet elegant design. 12, 8, 6 inch squares stacked. Flowers are gumpaste and hand painted. I discoverer from mulitple posts on ccc that placing the flowers in the oven with the light on overnight works great to speed up drying time. This was needed as the flowers had multiple layers. Thanks for the help!!

Thomas The Train Cake
Thomas the train chocolate transfer. This is my first chocolate transfer. Of all the different transfer methods, I like chocolate the best. Used candy sticks to reinforce the back of the image and to stand it up in the cake. Cake is lemon cake, vanilla pastry cream filling, IMBC frosting. All other decorations are fondant. Definitely going to do more with CT in the future... a lot of fun with this.

Mini Birthday Cakes
Mini cakes were cut using a round cutter from a gellyroll cake sheet. Pumpkin cake with caramel glaze fillng and creamcheese frosting. Covered in Fondant and decorate with gumpaste flowers (sunflowers and california poppy) and fondant flowers at base. I did mini cakes because this was my first attempt to cover a cake in fondant and I wanted to practice, a couple turned out really well, a couple others not so much. I definitely learned a lot and was happy with the overall look.

State Flower Celebration Cake
Cake represents the state flowers for 5 states covered in my work's region. Alaska = Forget-me-not, California = Poppy, Idaho = Mock Orange, Oregon = Mahonia (oregon grape), Washington = Pacific Rhododendron. Bottom tier = vanilla pound, rasberry pastry cream filling, IMBC. Middle tier = "Mojito" pound (rum, lime, mint), IMBC. Top tier = doctored chocolate with fresh rasberry filling and basic buttercream. The most challenging flower was the rhodi. Took two attempts and some help from Dawn's candy and cake. My favorite was the mock orange. Love how it turned out.

Talavera Tile Wedding Cake
This is my first competition piece. I definitely challenged myself with this. It has its flaws but it was the best of what I could do and gives me a lot more room for where i know I need to improve. I felt pretty good about it. For this cake, I learned how to make gumpaste flowers. The tiles are fondant, all pieces were cut with either a heart or a circle cutter and then recut to get the curves and angles to match. The bowl is poured sugar into a mold (top of a cupcake mold) and then placed a bowl, that was wrapped in foil and greased, on top of the poured sugar to shape the inside of the bowl.

50Th Jubilee Cake
This was made for a 50th aniversary and auction for my daughter's school. Flowers are gum paste. (working on the sunflower, its improving) Butterfliers are gem cutters. "50" is poured sugar. I used modeling chocolate for the mold and cut out the "5" and "0". I wasn't sure if modeling chocolate would work as a mold. I was pleased that it worked wonderfully. 6 inch round was vanilla cake with strawberries layered with chocolate ganache and chocolate cream. 9 inch tier was chocolate cake filled with fress strawberries and vanilla cream

Astronaut Cake
Astronaut Cake. Carrot cake, creamcheese frosting. Astronaut and alien figures are fondant. Planet is poured sugar onto greased aluminum foil and was molded using a bowl. Orange planets are cupcake molds. The "universe gasses" are poured free hand onto a silpat. The silpat is new, Its very fun to pour directly on it. The sugar holds shape very well, it doesn't run. Next step is a funnel to control the flow and a heat lamp to really start molding sugar.

Zoo Animal Birthday Cake
6, 9 and 12 inch tiers. IMBC frosting, fondant animal. The animals were cut free hand. (My 4 yr old did the flowers and leaves...she's awesome!) This is the most level I've ever done a tiered cake so i was really happy with it. Tried to get the frosting red, this was the closest I got. If any one knows the secret to red, please let me know. THANKS

Poured Sugar Candy Tile Cake
Candy tiles made from poured sugar. I used a silicone icecube/baking mold. Here's the recipe I used (developed from researching many sources) One part Sugar, 1/2 part Water, 1/4 part Light Corn Surup, Gel food coloring, Candy Thermometer. Mix water and sugar in small heavy sauce pan (I use the thermometer as the mixing tool). Heat on medium high. When temp gets to full boil (225) add corn surup. Continue heating to 275, add food coloring, continue heating 315 (hard crack stage). Ideally you want the whole process to take 20 min. I usually heat on medium high to 275, add color and then raise the temp to high. This gets me close to 20 min. Remove from heat at 300, the residual heat will raise the sugar to 315. Pour quickly into molds.

Harley Davidson Cake
RIT (Royal Icing Transfer) Harley Davidson sign. Thanks Cakehelp for the photo tutorial! I used wax paper instead of plastic wrap. The wax paper pulled some color off the icing. I will use plastic wrap next time, my fears of it were unwarrented. Let it set for 3 days, it was very solid and could have stood up on it's own. "Flames" are poured sugar. Cake was orange/chocolate checkered cake, creamcheese frosting. I was pleased with my piping on this cake, it's getting better...

Fire Spiderweb Cake
Buttercream frosting with piped spider's web. The center is poured sugar from a silicon mold. I was playing with sugar for the first time a week ago and used a left over item for the center as something was needed to balance the cake. My attempts at a spider failed and it was very late. The sugar created a nice "fire" effect and I was pleased with it.

Apple Tree Cake
Apple spice cake with creamcheese frosting. Tree is modeling chocolate. Apples and leaves are marzipan. Boarder is dried apples in carmel sauce. First time using marzipan. I can see how it works really well for sculpting, performs much more like clay than fondant. I will definitely use it again. I know I shouldn't have used white frosting to "glue" the leaves...just wasn't thinking...

Black And White Checkered Cake
Checkered cake pans have been sitting on my shelf for two years...finally put them to use. Turned out much better than expected and wow'ed the crowd at work. Used a doctored cake mix recipe (went easy as I had to make two batters), creamcheese frosting. Cirlces are made from piped white and dark chocolate. Tried to make chocolate swirls that could stand up for the center but they didn't have enough time to set and they disintegrated in my hands.

Tinkerbell Cake
Tinkerbell cake, both layers are yellow cake with chocolate ganache filling. Fondant flowers and stripes. My daughter wanted a cake with this music box as topper. Placed on plate to protect mechanisms under the music box. Flowers are designed from her favorite dress. I didn't quite achieve the balance I had invisioned but Im still learning and its an improved stacked cake for me.
