My husband's co-worker requested that I make a 3 tier Cheesecake Wedding Cake for her. Being in SW Louisiana, I reluctantly agreed to decorate it for her-- If she made the cheesecake layers since I was not an expert on those. OH MY ! THIS WAS A SUPER LEARNING EXPERIENCE! THEY SPLIT & CRACK ! The bottom 10" layer kept splitting and cracking and bowed out... but I managed to salvage it as best as I could. The middle 8" layer completely landslided - fell apart - it turned out she made that one rasberry swirl and it didn't completely thicken. And the top 6" layer had a few minor splits. All of the layers had crumbs galore that kept flaking into the icing - I used a gigantic tip to apply the icing, as to lessen the amount of crumbs b/c I had already tried the spatula and that didn't work very well. ...... This was the end result -- I had to completely scratch the idea of the middle 8" layer -- the bottom layer split even more at the reception hall. If anyone has any tips - please advise // but I don't see anymore cheesecake weddings in my near future - LOL
All Chocolate Buttercream - I mixed Green with chocolate.... Dark Chocolate Store bought with chocolate ....... and Regular White Buttercream with Chocolate for tan.
