Thomas The Train Cake
This is cream cheese icing. The whole thing is a big smash cake. You should have seen the lovely shades of gray and green that were in his ears and hair. The tunnel is a 6" that I cut in half, stuck the two halves together and carved until I got the shape I was looking for. Everything on it is icing except for the plastic train.
The groom is a windsurfer so this was great for him. The sand is plain white sugar because the beaches on the panhandle of FL are as white as snow.
These are royal icing flowers with half butter half shortening BC icing for the basketweave.
I used the Famous Chocolate Wafer Cookies to make "dirt" to plant my cupcakes in the terra cotta tray (a drip tray from a planter).
This was for the retirement of our receptionist at work. She was going on a 3 week safari. One of my cake students baked, iced and covered the cakes in fondant. I did the palm trees, fern, grass, etc.
Jamaican Wedding Cake
This is a traditional Jamaican black cake. It's a fruit cake that is soaked in port wine and iced in royal icing. It was my first experience with this type of cake and the icing job is not perfect, to say the least. But I was fairly proud of my calla lilies.
