Oh...I liked all about this video except chef's statement that a center dowel is "unnecessary" and the foam boards. Maybe he does not have any hills in his town. I have made wedding cakes for 21 years and lost one because the center dowel was not securely "anchored" in the bottom foam board. What a horrifying disaster. I refunded the bride's money plus gave her 2 free gigantic sheet cakes and still she hasn't spoken to me since. Stick with the home made bases (6 cardboard bases stacked cross grain covered in foil) and the finish dowels going through the cakes on either side of center firmly secured in the cake base.
