AYes, my niece who lives in Princeton, NJ wants this rustic cake. Trouble is, I've been working so hard on smoothing my SMBC, I don't know if I can get this swipey look. The back and forth look. Is the SMBC too creamy to hold this shape? How would I do it? Thanks for any help, Nancy

Looks to me like the cake is semi-smoothed then they have grabbed blobs of buttercream and just started swiping it on with the spatula in a somewhat uniform manner starting the next swipe on top of the last one. I am by no means an expert but that's how I would attempt to achieve that look.

just use short bursts of icing on your spatula-- you're there!

That is what I am looking for - starting a glob of icing on top of the lower one. I need to practice, but I had a cake and 3 dozen cupcakes I had to make for this weekend, I am going away for a week and the shower is the next weekend.
And, yes, that is burlap. It's the newest trend. Do you see the chicken poop on top?

Nancy, you got this! Here's a version I did, on a ginormous scale. Each tier was six inches tall. And my OCD with all things buttercream related still kicked in and I smoothed each tier and chilled it well before applying the rough patches. Can't do anything the easy way! Doh!
