What is special gift for mom on this Mother's Day?

I want to make chocolate cupcake for my mom.

Any idea, how can make this?

AYes I had alook when I saw your post Siany, then when I saw fudge I laughed out loud! (Siany really loves fudge K8!) I think they'd be brilliant for pigs in mud, can we get canola oil here?

I'd just sub with a veg oil Maisie or if I am being totally honest I'd use mild and light olive oil as we buy a huge bottle of it in Costco and I'm too lazy to go buy something else lol

AHope it works. I have to say I don't like the thought of oil in cakes, don't know why, it's not exactly rational is it?!

its makes a really moist (sorry) cake.  Its needed in chocolate cakes I think.  I generally don't like them without it in as they are dry.

maisie yes i was catching on that 'sainy' and 'fudge' were bffs --

 

it's getting dangerous to talk about them--i'm gonna have to make some--i'm so weak--olive oil will work great and hey it's good for you --

 

you just babysit that icing a bit and get it at the right temp and it sets up brilliant and after that you start wondering if you really need to make the cupcakes next time :lol: why not just go for the icing --but no it's more fun with the cake too--but sometimes i'd like to make  real short cuppies so you get twice as much fudge--mmm

had a yard sale this past weekend-- so made some of these to celebrate & snapped a couple happy fudgey pics

 

 

they bake up so nice & pretty

 

 

great for breakfast too :lol:

AThey have to wait a couple of moths now as on a diet till I go in holiday (too many nice things since Christmas) but they are a definite after. They look so good :)

yes i definitely need to stop the fun and loose a few pounds--i affectionately (NOT) call it ''food prison" or "food lockdown", "entering the dark and dusty bowels of the sugar dungeon-- :-D  no white food allowed hehehehe (flour, sugar potatoes) grr

 

i have a wedding to attend in june so that's usually a helpful motivator but we'll see--oh i have a few diet friendly recipes using truvia --do you all have this --it's a little sugar with a sugar alcohol--i'm sure you all have some version of it--i can't vouch that it is healthier but it is not as many calories and does not trigger the cravings although that's never stopped me from downing the entire batch of lemon/lime curd in 24 hours--so i have it measured out in small batches--

 

oh dang i use non-metrics though--oh well--maybe some of it would be helpful--the pizza crust would translate--it is well worth the effort

ALemon and lime curd. In true Janice fashion oh. My. Goooood. That sounds like heaven.

We do have truvia, though I personally can't stomach it as it's made from stevia which I find repugnant. Everyone raves on it but it seems to have the most vile aftertaste to me. I'm sure there's some other low cal sweetener available that would do the job though :)

i couldn't agree with you more about stevia--for years i could not figure out why anyone would willingly put it in thier mouth--in fact there's a post on my blog about "stevia and me-via"-- since they are making a much better product now--after years and years i finally acquired the taste for stevia--but some of the older brands were just total horse poo--i use and like the sweet leaf brand all stevia now--haven't baked with it yet--i use it in beverages though

AWow. I put stevia in tea all the time. And a little bit in a fruit smoothie. I love it...no after taste to me. But I used to use sweet n low which def has a taste. I'm trying it in baking soon

oh awesome--hey wait i might have used stevia in my baking once--but y'know it's so much more concentrated than sugar --and you have to replace the sugar substance with something so the recipe will have half a chance--so i think i used applesauce for the replacement--i think i made lava cakes--then i just ate the applesauce instead of baking lol
