Hi all,

 

I have been doing some homework on seeing what people charge for cakes in general.  I see why people charge less for a simple sheet cake than more labor intensive cakes; but how much less per serving should it be?  I've seen some websites where it is barely over a dollar per serving--can that be right?  What do you guys think is more along the lines, for your simple basic sheet cake with basic decorations?  I keep seeing these low amounts for sheet cakes....TIA

AAdd up your costs for the sheet cake (ingredients, labor, and allocated overhead) to give you a floor, then look into market value for sheet cakes in your area to figure out how much markup you can add. It may be possible that in your area $1/serving can be profitable, or you may have businesses who don't know how to price properly.

In my area for a 9 x 15 with just flowers I get $23.

11 x 15 $30

1/2 sheet $40

whole sheet $80.

 

If there is lots of work with fondant I charge a lot more.

AThat sounds like what Walmart charges, actually, aren't they more than that?

A Walmart cake is made in a factory by minimum wage workers, using low quality cheap ingredients. And Walmart still takes a loss on their price. MsDaisey you would literally make more money by not actually making any cakes.

That's a great way to look at it. If cakes are not priced for profit, the fewer the cakes sold the more money people will make. So the less they do, the richer they become. Priceless :wink:

Walmart 1/4 sheets go for about $15.00 their half's are about $34.00 I believe the full sheets go for around $50.00.

 

I live in the mid west I charge $100.00 for a basic one layer FS cake with just BC and minimal design. Here is a price list for a well established Italian Bakery in my area.

I think that round cakes are easier to ice than rectangular sheet cakes.  Sharp edges suck.

Thank you all.  Nice website Jason, your blogs are so well written.  I will really have to look at overhead.  I have not yet really found a place where I feel like I can buy cake boxes cheap enough.  Maybe I'll try online. Not to mention cake boards...and foil....and toothpicks...and paper towels....etc.

I do my 9x13 sheet cakes starting at $60. This is single layer, with filling. I do give a discount on full sheets, and double layer full sheets. They aren't any harder than than a 1/4 sheet, I have plenty of pans so I don't have to bake in stages, so I provide the discount to widen the market, $196 for a full sheet, $294 for a full sheet, double layer.

I cover a 1/2" foam core board, supports a 2 layer, full sheet. 1/4" foam core will work for 1/4, double 1/4, and 1/3 sheets. I buy boxes at BakeMart, but you have to have a business.
