Can I Keep A Mmf Covered Cake In Fridge For Two Days??

AI mixed up my dates and took an order on a date that I'll be out of town! Fail. I'll be leaving two days before the date needed, so would she be able to pick up the cake and keep it in the fridge for two days? Will the cake taste okay and will the mmf fondant be okay? Help please :)

AYes it will be fine. The fondant will keep the cake fresh. It's best if it is in a cake box so it wont absorb any other food odors from the fridge. Also when it comes out of fridge the box should absorb any condensation that may form. Whatever you do, do not touch the cake to try to wipe any " sweating" confensation off. Let it dry on it's own.

Thank you so much! I was worried that the cake would get hard or something! I'll make sure to keep the cake wrapped up! :)

AYou're welcome. Cake shops that have multiple cakes per week refrigerate all the time. It would be very typical for them to bake on Wednesday, cool, fill, and ice . Then apply fondant on Thursday , deco on Friday, deliver on Saturday. The only way a cake will harden or dry out in the fridge is if it's exposed to air. So fondant protects it. Some cakes that do not have perishable fillings do not need to be refrigerated at all- and will stay fresh under fondant for a few days at room temperature. I personally like to refrigerate my fondant cakes because I feel it makes them solid and sturdy for delivery. I live in Oregon where there is not a lot of humidity so I never have a problem with excessive cake sweating.

Egg nog cake..Baked on Tuesday, filled & iced wednesday, thrown in fridge. Fondant on Thursday, back in fridge. Here's the kicker- I just got a text YESTERDAY saying they just cut the cake ( sunday) and it was delicious and so moist!" Good to know!
