Oh man am I tired!!  Making cupcakes and a cake to serve 100 is much harder than making just one big cake for 100 people.  I'll be remembering this for the future.  I am doing this for a friend, though, so my hard work comes from the heart.  

 

How do all of you professional full-time bakers do it??  I would just pass out every day.  I am a hobbyist who charges (legally) for what I bake.

 

Then the cleaning of the kitchen…thankfully it's all done.

Now for a "cake break."  No baking for a few weeks.

I charge a very high price for the cupcakes so they usually take the cake option.

i think that's a great option! it is  mind blowing--as i've stated a couple times, i did a family wedding cake recently but i had my nephew come in to help me but dang did i ever pass out every day anyhow  :lol:

 

i think it's a perfect description--should be added to the work log--and double rough on those who stay up all night-- yikes--

 

cupcakes are especially tortuous they are like babies that can hardly sit up on their own---very needy they are--have to be carried every freaking where--

The majority of my business is cupcakes. I have made up to 300 at a time in my little home kitchen. Recently did 12 doz for a fundraiser over 2 days. It was exhausting, but well worth it! I love cupcakes! haha! I just basically get an assembly line going and bake, bake, bake! Cool, put into cupcake boxes. Frost while they are in there. Decorate! ...the only thing I don't love is individually boxed cupcakes. They take FOREVER!

 

I do charge $3 per cupcake though. That is the price around this area as well. Anywhere between $3 and $3.50 per cupcake. People just have no clue on how much work goes into making them! They also think because they are a cupcake, they should be cheaper than a cake. Ummm...no! They are a serving of cake. Why should they be any cheaper than a serving cut out of a whole cake?

 

I also LOVE the people who want custom fondant decorations on every single cupcake but don't want to pay for them. They take hours and hours to make. If they don't want to pay for them, fine! Feelings are not hurt! :)


OK! Off my soap box! So glad you were able to make them for a friend. I saw your other post where you said she wanted to pay you more than you charged her. She obviously appreciates what you do and the hard work that goes into making your cakes!

AI mostly agree that cc's are way easier. I charge $3 for undecorated ones (just icing). But my cakes are much more expensive more like $6-7 on up per serving. The small 6 in cakes that people order with cc's tend to run about $9 a serving. These cc orders are one of my favorite things to do.

When I first started cc's terrified me. You get the hang of it.
