Cake flour can go about 2 minutes. Due to the higher level of gluten, I only beat AP flour just until combined, using my spatula to stir the last little bits together until you can no longer see the flour.

ADepends entirely on the recipe, once everything is in the bowl though, just until incorporated for the most part. If I'm creaming the butter and sugar, minimum 5 minutes.
