can anyone tell me what I am doing that makes one side of my round cakes slope. this is after icing them. The rest of the cake has nice straight sides. This always happens to me so I think it is something I am doing. help

Double check that your table and turntable are both perfectly level. If you frost your cakes on un-level surfaces it's hard to see where your going wrong until you place the cake on a level surface...than you see how it's off.

Otherwise it's probably operator error/ inexperience. Just double check your angles several times and add more frosting or take away frosting where needed. No one is perfect doing this with-out lots of practice.

how tall are your tiers? much taller than 5 inches and i find that you need to treat it like a double shot and provide support on the inside. You might also want to use a level. I level the sides and the top together, as it's very difficult to tell if a round cake is straight from only one angle.

By sloped, do you mean they are iced in a pyramidal shape?  If so, try using a bench scraper on the sides.
