This is my famous (at least around here) Banana Nut bread cake. It is amazing. I have been doing these for years. It is so light and moist filled with very ripe bananas, vanilla, buttermilk, butter, and chopped walnuts. Topped off with chopped walnuts and a vanilla glaze.

Just wanted to share.

Can't wait to dig into it!!!!!!!!! icon_biggrin.gif

I had a recipe request.

Here it is!

INGREDIENTS
2 1/2 cups white sugar
3/4 cup butter flavor crisco
1/4 cup butter
3 eggs
2 cups mashed bananas
3 cups all-purpose flour
1 1/4 cups WHOLE buttermilk
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
3/4 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Cream together shortening and sugar. Add eggs one at a time, beating well after each addition. Mix in bananas, buttermilk, and vanilla. Mix in flour, baking powder, and soda. Stir in 1/2 cup nuts if desired.
Spray bunt pan with pam baking spray (spray that has flour in it) Sprinkle 1/4 cup of chopped nuts in pan.
Pour batter into bunt pan.
Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.

Once cooled drizzle with vanilla glaze.

I take approx 2 cups of powdered sugar
1 tbsp of clear vanilla and mix then add water to thin.
Do the water a little at a time and taste to make sure you have enough vanilla or it will have the powder sugar taste. Just add vanilla until you get the taste you like. I just eyeball this and go by taste, there is no given recipe for it.

Hope you enjoy it. I just did!!!!

Can you please tell me if this can be cooked in round pans. I have a bride that has asked for every tier to be this flavor and find that my recipe is great but not good for a large pan. Thanks for sharing such a great recipe and I can not wait to try this for my family. We love banana bread.
