Mocha Chip Cookie Recipe

Just when you thought chocolate chip cookies couldn't get any better, we doubled the chocolate and added some coffee. All you need is a glass of milk and this cookie for the perfect treat.

Mocha Chip Cookies

Ingredients:

1 cup butter, softened

1 1/2 cups granulated sugar

2 eggs

1 tablespoon pure vanilla extract

5 tablespoons instant coffee granules

2 tablespoons warm water

2 cups all-purpose flour

2/3 cup cocoa powder

3/4 teaspoon baking soda

1/4 teaspoon salt

2 cups semisweet chocolate chips


Preheat oven to 350°F

Beat butter and sugar until light and fluffy.

Combine coffee granules and water, stir to combine.

Add eggs, vanilla, and coffee scraping the bowl as necessary.

Combine flour, cocoa, baking soda and salt and incorporate into butter mixture

Fold in chocolate chips.

Drop by tablespoon onto parchment lined baking sheets.

Bake 8 to 10 minutes until set.

I am the cookie queen and can't wait to try these.  They look similar to one I make already.  Add a couple of tsps of cinnamon to give it a real cozy flavor!

I made these yesterday. If the recipe is correct as written, I would definitely cut back on the instant coffee granules. I used 3 Tablespoons and found the cookies to be a little bitter. Next time I'll use 1 1/2 Tablespoons. That will give it a nice mocha flavor without overpowering the cookie, in my opinion. (I'm a coffee lover, but not when it's bitter.) Other than that, it was a lovely chocolate cookie. I got about 65 cookies, using a #40 scoop.

Maybe the recipe should've said 5 tsp.  I used 2 Tbsp (6 tsp.) and it was a perfect mocha flavor.  I can't wait to share them at our teachers meeting tomorrow--get ready for a little zing!
