Chocolate sculpture with fondant, gum paste, cake lace and sugar pearls, done for the Couture Cakers Collab, 2019.
Created for the Gothic Art Collaboration, my goth fairy is made of modeling chocolate on a wire armature, dress and hair are fondant, wings are gelatin and cake lace, the skull is modeling chocolate over styrofoam and the flowers are gum paste. The piece is 16 inches tall.
Poinsettia Sugar Flower In Gum Paste

Fondant and gum paste unicorn cake. Vanilla cake with raspberry pomegranate buttercream filling.
I made this cake for my Granddaughters birthday. The cake was a chocolate fudge cake with a raspberry puree, and two kinds of buttercream -raspberry buttercream and chocolate buttercream. The ‘waves’ and floating tube were marshmallow fondant. The seashells and starfishes were made from chocolate. The crabs, lei and beach umbrella were made from of gum paste. And “X” marked the spot where her ‘buried’ birthday gift was hiding!

This cake makes me Happy. The bright colours just make you smile. Chocolate cake with a Brazilian chocolate mocha smb. Raspberry filling. Gerbera daisies made with Flower Pro, I made my own design on wafer paper for the fault line centre. I then used fondant / gum paste smaller daisies for a 3 d effect. Thanks for looking! Cheers!

Created for the Royal Challenge on Bakerswood, Isabella is 13" tall from the base, made of modeling chocolate, fondant, gum paste, petal dusts and cake lace.
White/almond cake with buttercream icing. MMF w/gum paste head. Feathers are white chocolate.
This gingerbread chapel is made from edible materials. It features a gingerbread wall and roof structure, candy window glass, fondant siding and roof tiles. The steeples are made from ice cream cones wrapped in either fondant or gum paste, with the tallest steeple covered in an edible paper and painted with edible gold food colouring. The main entrance was custom designed in clay, a food-safe mould was made from the original and then cast in white chocolate.
