Date Cake!

And no, I don’t mean it’s going out to dinner - this cake was make with only 5 ingredients ( including Medjool dates), no grains and no refined sugar. Amazing crumb, super moist and all my taste-testers loved it!!! Woohoo!!!

@SandraSmiley - thanks! I was super suprised it tasted so “un-datey”!!! It’s also ridiculously easy. If you ever wanna try it, just holler and I’ll send ya the recipe.

Can’t take credit for this recipe, my friend said she found It online somewhere...I just added vanilla almond butter and salt. It’s so easy and delicious!!

Okay, here goes:

1 cup pitted Medjool dates

1/2 cup water

3 eggs

1 cup vanilla almond butter

1 t vanilla

3/4 t baking soda

1/4 t salt

-purée dates with water in food processor.

-Then add eggs and purée some more.

-Then add everything else and puree until it’s smooth. THAT’S IT!!

- I purée into 2 greased 6” pans...my friend said she did one 9” pan?!?!

-bake at 350 for about 22-25 minutes.

Thanks you, MerMadeBakedGoods!  I can't wait to try it.  I've never heard of vanilla almond butter; not sure if our markets carry it, but I will look.

@sandraSmiley- the brand is Justin’s. But if you use regular almond butter you just add more extract!!

you can also use peanut butter (which i love), but then the result is definitely peanut butter cake,  or a sweet vanilla earthy flavor.
